In this video, Betty demonstrates how to make Sausage and Egg Breakfast Casserole. This is an easy casserole you can make one or two days ahead and bake it as a breakfast for company. Ingredients: slices of bread with crusts removed (I used 6 large slices of hearty whole grain bread.) ½ stick butter, softened 1 pound sausage, browned and drained 6 eggs, well-beaten 2 cups milk 1 pound Cheddar cheese, shredded Thinly butter both sides of 6 large slices of bread. Line the bottom of a 13-inch by 9-inch by 2-inch baking dish, cutting bread and piecing the slices to fit the bottom of the dish. Cover the buttered bread slices with 1 pound of browned, crumbled sausage. Mix 6 well-beaten eggs and 2 cups milk together. Pour egg mixture over bread and sausage. Top with 1 pound shredded Cheddar cheese. Cover casserole with aluminum foil and refrigerate overnight. The next morning, bake the casserole 45 minutes in a 350 degree (F) oven, leaving foil as a covering. After 45 minutes, remove foil and bake 15 additional minutes. Remove casserole from oven and drain any fat that has accumulated from the melted cheese. Let casserole sit for about 10 minutes, then cut into squares and serve. In this video, Betty demonstrates how to make Meatballs and Tomato Sauce. In this recipe, the meatballs are browned on top of the stove, then covered with a rich barbecue-flavored tomato sauce and baked in the oven. Delicious! Ingredients: Meatballs: ¾ pound ground beef (I used 4% fat ground beef.) ¼ pound pork sausage ½ cup soft bread crumbs ¼ cup onion, finely chopped 2 tablespoons fresh parsley, minced ¾ teaspoon salt ½ teaspoon dried marjoram leaves (You may substitute dried thyme, rosemary, or oregano.) dash of ground black pepper 1 egg, well-beaten ¼ cup milk Frying oil: ¼ cup peanut oil (You may use any vegetable oil.) Tomato Sauce: 10.75 ounce can tomato soup ½ cup bottled barbecue sauce ½ cup water 1 tablespoon Worcestershire sauce 2 tablespoons chopped onion 1 clove garlic, chopped In a large mixing bowl, combine ¾ pound ground beef, ¼ pound pork sausage, ½ cup soft bread crumbs, ¼ cup finely chopped onion, 2 tablespoons fresh minced parsley, ¾ teaspoon salt, ½ teaspoon dried marjoram leaves, dash of ground black pepper, 1 well-beaten egg, and ¼ cup milk. Mix lightly, but well. Shape into 1-inch balls. Heat ¼ cup peanut oil in a skillet over medium heat. Brown meatballs in a single layer. Be sure to let each meatball brown completely on the bottom before turning to brown the other side. When all meatballs are browned, place them in an oven-proof baking dish. In this video, Betty demonstrates how to make Chocolate Milk. This is a very simple recipe, and you can make substitutions for a low calorie version. Ingredients: 1 tablespoon unsweetened cocoa powder 2 tablespoons sugar (or sugar substitute, such as Stevia) 4 tablespoons scalded milk 1 ¼ cups cold, fresh milk (I used skim milk.) In a medium-sized serving glass, place 1 tablespoon cocoa, 2 tablespoons sugar, and 4 tablespoons scalded milk. With a tea spoon, stir ingredients until cocoa and sugar are dissolved in the scalded milk. Now pour in 1 ¼ cups cold, fresh milk and stir until all ingredients are combined. In this video, Betty demonstrates how to make Cheese Shorties. These are savory cheese crackers that may be used as a snack or as an accompaniment to a dip or salad. Ingredients: ½ cup butter, softened 8 ounces finely shredded Cheddar cheese 1 cup self-rising flour (You may use all-purpose flour.) ¼ teaspoon garlic powder cooking oil spray Use an electric mixer to beat together ½ cup softened butter and 8 ounces shredded Cheddar cheese. Add 1 cup self-rising flour and ¼ teaspoon garlic powder and mix thoroughly. I used my electric mixer for all of the mixing. Form dough into a ball and place in on a clean, smooth surface. Roll the dough into a log that is about 1inch in diameter. Chill or freeze. To prepare for baking, cut log into 1/3-inch slices. Place on a shallow baking pan that is lined with parchment paper and sprayed with cooking oil spray. Place slices about 1 inch apart. Bake at 400 degrees (F) for 8 to 10 minutes. Remove from baking pan and place on cooling rack to cool. When cool, transfer crackers to a nice serving plate. This recipe will make approximately 2 dozen cookies.
